Hi Eric, When I read this verse, I have assumed that brothers refers to Ammon's actual brothers whereas brethren refers to the others who the sons of Mosiah selected to go with them Mosiah 28:1. Under that interpretation brethren is a more general term than brothers. I think that interpretation is consistent with how we use the word today in the church. What I'm not sure though is if that interpretation is supported in the text. Its an interesting question. What do you/others think on this one?
